Creamy/Cheesy Potato Soup

This week I made the most delicious and simple CHEESY POTATO SOUP!
I added in steamed broccoli to this as well and omg it is PERFECT. ​

Ingredients: 

  • a bunch of yukon gold potatoes – maybe 7-8 medium
  • onion
  • 2 cloves garlic
  • few dashes of liquid smoke or smoked paprika
  • 2-3 cups vegetable broth
  • pepper
  • 2-3 tbsp raw cashews or a few tbsp of tahini works too
  • a ton of nutritional yeast – depending on if you enjoy that flavor.
  • broccoli if you want!


Instructions:

  1. Dice potatoes and boil until soft!  Same with the broccoli.
  2. Drain and pour 1/2 the potatoes into high speed blender or whatever blender works for you + all other ingredients. Blend until smooth – add more veg broth if you want the soup to be thinner!
  3. Mix together with broccoli and potatoes – ENJOY!
  4. OPTIONAL: Roast up some cubed or “disked” seasoned potatoes until they are nice and crispy and dip or add them on top of the soup!
