no bake brownie

10 Minute // No Bake Brownie

You will not regret making this .. Damon and I eat like 3 batches per week! Luckily, it is SUPER healthy!! 

 

Ingredients:

  • 1 cup dates (I prefer medjool – they bind better).
  • 1 cups oats – I used quick oats but regular is fine.
  • 3 tbsp natural peanut butter.
  • 1/2 cup cacao or cocoa powder.
  • 1 tsp vanilla extract.
  • 1/4 tsp salt.
  • A few handfuls of nuts/seeds of choice (hemp, chia, flax, walnut, cashews etc)
  • For topping: 3/4 cup vegan chocolate of choice – I used Enjoy Life chocolate chips.

Instructions:

  1. Soak dates in warm water for 10-15 minutes and drain well.
  2. Pop everything into a food processor or high speed blender (like a vitamix).
  3. Combine evenly .. you may need to stop and scrape down the sides with a spatula and/or add a few dashes of plant milk if using a tall vitamix or if you are having trouble with the mixture combining.
  4. Line a container with parchment paper (smaller if you want thicker brownies / bigger if you want them thin!) I used a round iron skillet.
  5. Press batter evenly into container. If batter is too sticky, use another piece of parchment paper on top and press evenly using that.
  6. Melt chocolate (I did mine in a small sauce pan on the stove – slow and low as not to burn it!) and pour over the brownie – spreading evenly on top.
  7. Pop it in the freezer or fridge for 30 min to chill! Until the chocolate has hardened most of the way.
  8. You can serve cold, frozen, room temp or warm them up a bit.
  9. Add other toppings like nuts/seeds/nut butter if you want .. and try them with banana whip or another vegan ice-cream!
  10. Store in an air tight container in the fridge for up to a week or in the freezer for … a while lol. But they won’t last – I promise 😛
