I was over the top skeptical about making this recipe .. and now this by far is my favorite tofu recipe! I used to love BLTs and these bring back the best memories without harming the animals (or myself!) .. It really rocks my world that anything non-vegan can be made vegan, plant based, healthy and most importantly: DELICIOUS! 

We used Dave’s Killer Bread (a healthier choice of bread in my opinion) and vegan mayo (not the healthiest but it’s ok once in a while and you can always omit or use another spread if trying to avoid more refined spreads!) .. Fresh tomato and some shredded iceberg lettuce complete the sandwich!

You can also use the bacon in buddha bowls, on top of a salad, as a side for a breakfast dish or breakfast style burrito .. the options are endless!

 

Ingredients: 

  • 1 block of extra firm tofu
  • 1 tbsp nutritional yeast
  • 2 tbsp soy sauce (or tamari or aminos etc)
  • 1 tbsp maple syrup
  • 1 tsp liquid smoke

Directions: 

  1. Preheat oven to 375F and spread parchment paper on a baking sheet.
  2. Drain and thinly slice the tofu. 
  3. Mix all marinade ingredients together and marinade tofu for a few minute (up to 30 min if you want!) 
  4. Place tofu on sheet and bake for 20 minutes .. flip and bake again for another 20 or until desired crisp occurs! Keep an eye on it – everyone’s oven is different! 
  5. Serve on freshly toasted bread with vegan mayo, lettuce and tomato!! YUM!
