Smokey Taquitos | Spicy Queso

This recipe is so simple and as always, jam packed with flavor. Make this recipe as spicy as you crave (or not!) .. A cheap, delicious and very simple recipe that will please vegans and non vegans alike!
+ it is full of all the good stuff and none of the bad stuff 😛 

TAQUITOS

Ingredients:

  • 1 can chick peas
  • 1-2 medium peeled/diced sweet potato
  • 1/2 small can tomato paste
  • 1/2 cup veg broth can use leftover from boiling sweet pot)
  • 1 small/medium onion.
  • 1 bell pepper
  • 2 cloves of garlic or a few dashes of powder.
  • 2 tbsp hot sauce
  • 1 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 1/2 tsp cumin
  • A few dashes of liquid smoke OR 1/2 tsp smoked paprika
  • Chili powder if you like it hot + salt/pepper to taste (if you feel you need it!)
  • Tortillas – whatever brand you are comfortable with. Corn tortilla work well or any other wholesome brand (avoid heavy oils/salts/refined flours/chemicals etc!)

Instructions:

  1. Mash up chick peas roughly.
  2. Cook up sweet pot first .. when they are almost cooked add Diced up the onion / bell pepper and cook up until soft – I used a pan + a little veg broth!
  3. Add garlic + all spices and mix up for a minute.
  4. Add all other ingredients (chick peas, paste, liquids etc!) and sauce for another few minutes. Mix well!
  5. Preheat oven to about 400-425F (depending on your oven!)
  6. Scoop filling into tortilla – amount will depend on size of the tortilla itself!
  7. Roll up tightly and place on a baking sheet lined with parchment paper!
  8. Bake for about 15-20 min .. keep your eye on them and you can make them a bit crispier by turning the oven on convect bake or placing on the top rack etc (you know your oven best!)
  9. Next up is the cheese sauce! Which is so easy and can be made while these are cooking!

 

SPICY QUESO

Ingredients:

  • 1 cup boiling hot water
  • 1 cup cashews
  • 4 oz can of mild OR spicy roasted green chiles – depending on how you like it!
  • 3 tbsp nutritional yeast
  • 1/2 tsp salt – less if you want.
  • 1/2 tsp cayenne pepper – this makes it super spicy and you can omit.
  • A few dashes of liquid smoke OR 1 tsp smoked paprika
  • 1 tsp cumin

Instructions:

  1. Add everything to a high speed blender (I use a vitamix).. cashews first, then boiling water, then chiles and the rest! (You can also leave 1/2 the chiles out for a chunkier cheese sauce and just mix those in at the end!) 
  2. Blend on high until SMOOOOTH!
