High protein fudge brownies

Moist, rich and decadent. These are entirely refined food free, plant based and vegan! No refined oils, sugars, flours – gluten free, egg free, dairy free! High in protein and you can eat them every single day with zero guilt!
This is why I adore being plant based 🙂 

INGREDIENTS:

  • 1 can kidney beans (I think any bean will work but I used the kidney beans! – drain and rinse very well with warm water) 
  • 1/2 cup nut butter — I used single ingredient organic peanut butter! 
  • 1/3 cup of maple syrup + a few dashes of plant milk. Or 1/2 cup maple syrup – depends on how sweet you do or dont like it. Feel free to use other sweeteners of choice! I used date syrup as well and it worked! If you use a powder / grain sweetener make sure to use more plant milk. 
  • 1 tsp vanilla
  • 1/4 cup cacao
  • 1/4 cup oat flour
  • 1/4 cup almond flour
  • 1/4 tsp baking powder and 1/4 tsp baking soda 1/4 tsp salt
  • 2 tbsp egg replacer or flax eggs might work (I used Bob’s Red Mill egg replacer!) 
  • A few handfuls of vegan chocolate chips (can omit) or you can add nuts/whatever other add ins you like. 


DIRECTIONS:

  1. Line (parchment paper) or grease an 8×8 baking dish and pre-heat oven to 350F.
  2. In a high speed blender (Vitamix) or food processor blend up maple syrup, vanilla, peanut butter and plant milk – you can also mash by hand but make sure the beans are well mashed first then mix in the rest with a spatula.
  3. Pour into a large mixing bowl – mix dry ingredients and fold them into this batter.
  4. Pour into baking dish and bake for about 22ish minutes – depending on your oven!
  5. Allow to cool for 20-30 min. before cutting in!
