BBQ Pulled Jackfruit

BBQ Pulled Jackfruit

You can buy this pre-packaged at some specialty health food stores and it is tastes AMAZING!
But it is one of the simplest recipes and you can make 4-6x as much for the same price if not cheaper!

Ingredients: 

  • Two 20oz cans of young green jackfruit (what I used)
  • 1/2 to 1  cup bbq sauce of choice (we opt for organic and simple ingredients!)
  • Water to thin.
  • Salt, pepper, garlic, liquid smoke or smoked paprika to taste!

Instructions: 

  1. Rinse the jackfruit with cold water – SOAK for 20 min or so and rinse a lot if you use jackfruit in brine – that stuff tastes nasty!
  2. Dry out the jackfruit – you can let it sit on a tea towel or twist it up in the tea towel and squeeze out that excess water (as much as possible!)
  3. Toss the jackfruit in salt, pepper, garlic and smoke paprika or liquid smoke (a few dashes of this if you use it!)
  4. Heat a non stick skillet over medium heat (add a smidge of oil if your pan isn’t the best!) and add jackfruit and sauce for about 3-4 minutes.
  5. Add bbq sauce and water to thin, coating everything evenly.
  6. Lower heat and cover with a lid for about 20-30 minutes – until the jackfruit becomes very tender! Stir occasionally.
  7. You can leave the chunks big, break them up a bit or make the jackfruit extra fine and use a fork to pry apart/shred!

 

NOTE: you can also add shredded sweet potato into this mix and it gives it even more depth and flavor. Just shred/peel slice your sweet potato and cook up with the same spices and combine all together!
