BBQ Pulled Jackfruit

You can buy this pre-packaged at some specialty health food stores and it is tastes AMAZING!
But it is one of the simplest recipes and you can make 4-6x as much for the same price if not cheaper!

Ingredients:
- Two 20oz cans of young green jackfruit (what I used)
- 1/2 to 1 cup bbq sauce of choice (we opt for organic and simple ingredients!)
- Water to thin.
- Salt, pepper, garlic, liquid smoke or smoked paprika to taste!
Instructions:
- Rinse the jackfruit with cold water – SOAK for 20 min or so and rinse a lot if you use jackfruit in brine – that stuff tastes nasty!
- Dry out the jackfruit – you can let it sit on a tea towel or twist it up in the tea towel and squeeze out that excess water (as much as possible!)
- Toss the jackfruit in salt, pepper, garlic and smoke paprika or liquid smoke (a few dashes of this if you use it!)
- Heat a non stick skillet over medium heat (add a smidge of oil if your pan isn’t the best!) and add jackfruit and sauce for about 3-4 minutes.
- Add bbq sauce and water to thin, coating everything evenly.
- Lower heat and cover with a lid for about 20-30 minutes – until the jackfruit becomes very tender! Stir occasionally.
- You can leave the chunks big, break them up a bit or make the jackfruit extra fine and use a fork to pry apart/shred!
NOTE: you can also add shredded sweet potato into this mix and it gives it even more depth and flavor. Just shred/peel slice your sweet potato and cook up with the same spices and combine all together!
