BROWNIE PANCAKES

We have eaten these every single day for breakfast (or lunch… or dinner lol) for the past 2-3 weeks here in South Africa and they are a new favorite! I always am amazed at how delicious eating this way is .. plant based vegan ROCKS!

 

DRY INGREDIENTS:

  • 1 cup oats or oat flour (I used quick oats here but I would use oat flour if I was home – simply ground up normal preferably organic rolled oats in a blender or food processor!)
  • 1/2 cup flour of choice (I used whole wheat here but gluten free, spelt, almond etc would be great!)
  • 1/2 cup almond flour (if you don’t have this you can just use 1 full cup of the flour above!)
  • 1/3 cup cacao or cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp salt

WET INGREDIENTS: 

  • 3 tbsp nut butter of choice (I used almond)
  • 1 tsp vanilla extract
  • 1 mashed ripe banana (can sub for apple sauce or pumpkin)
  • 1-2 tbsp maple syrup or other sweetener
  • 1 1/4 cup plant milk
  • 1 tbsp apple cider vinegar (or white vinegar)

NOTE: Feel free to add in extras like fruit, nuts, coconut, chocolate chips etc! 

 

INSTRUCTIONS: 

  1. In a large bowl mix sift together all dry ingredients.
  2. In a smaller bowl mix together all wet!
  3. Add wet to dry and mix until batter is evenly mixed!
  4. Heat a nonstick pan or oiled pan on medium/high heat (may vary depending on your stove) and drop batter using a large spoon or I like to use an ice cream scoop that has the retractable scraper.. I sometimes just make big pancakes but it depends on what you prefer!
  5. When several bubbles start to pop through and edges become matte flip and cook other side. About 2-3 min per side usually!
