CHEESY TORTILLA SOUP

CHEESY TORTILLA SOUP

This is a nutrient dense, satiating and cozy meal. Perfect to big batch / double batch / freeze / meal prep .. like a taco in a bowl (but healthier!!) ..

​INGREDIENTS:

  • 1-2 sweet potatoes (peeled and diced)
  • 1 medium sweet or white onion
  • 2 medium carrots (optional)
  • 1 cup celery
  • 1 TBSPish Diced jalapeño if you like it spicy!
  • 3 cloves of garlic
  • 3 cups vegetable brother (I use 3 cups water + 3 tsp low sodium veg bouillon paste)
  • 1 cup tomato sauce.
  • 1 can beans of choice (rinse well!)
  • 1 tbsp cumin
  • 1 tsp liquid smoke
  • Salt / pepper to taste.
  • 1/2-1 cup nutritional yeast
  • 1/2 – 1 cup wild rice (or quinoa/grain of choice – can be omitted but makes it extra yummy!)

 

INSTRUCTIONS: 

  1. Add onion, carrot, sweet potato, garlic and celery to bottom of pot with all the broth and simmer – stirring occasionally until everything is cooked mostly through (15-20 min or so!)
  2. Cook up wild rice as per instructions on packaging – I like to use vegetable broth for this! 
  3. Stir in spices, tomato sauce and beans. 
  4. Scoop 1/2 the soup into blender and blend – add back into pot. 
  5. If soup is too thick, feel free to add more veg broth! Depends on what you like – a thinner soup or thicker “chili” like consistency. 
  6. Add in wild rice and mix well.
  7. Serve with corn tortillas, avocado, cilantro, tortilla chips etc!
