Coconut Curry

This recipe is satiating, comforting and easy.
Simple ingredients // minimal time // maximum flavor!

Ingredients:

  • Any vegetables – bell pepper, cauliflower, broccoli, mushrooms, zucchini, peas, corn, carrots etc!
  • 1 sweet onion – diced.
  • lots of crushed garlic – 1-2 TBSP depending on your liking!
  • 1 big tbsp crushed ginger.
  • 1 can organic coconut milk
  • Curry powder / paste – I used just the powder because I couldn’t find the paste here on Madeira. But you can use 4 big tbsp total — 2 of each or 4 of just one!
  • A few dashes of cumin
  • 1-2 tbsp maple syrup
  • 4 tbsp liquid aminos or lite soy sauce
  • 1/2 a lime (juice)
  • pepper if you want!

 

Instructions:

  1. Cut up all the veg and place in a big soup pot (or slow cooker/instant pot!)
  2. Add diced/crushed onion/garlic in a pan on med heat and add a little water and cook until translucent – 5 min or so.
  3. Add curry powder/paste, coconut milk, ginger, cumin, aminos, maple syrup, and stir evenly!
  4. Pour mixture over vegetables in the big pot and turn to medium/high for about 10 min and then lower to a simmer and cover.
  5. Cook until veg is soft! another 10 minutes or more depending on size of vegetables / type!
  6. Add in lime and mix.
  7. Serve over steamed rice or noodles or whatever else + add more lime on top if you want! YUM!
