Microwave Cake Bowl

Sometimes a tiny mug cake just won’t cut it.. Moist, satiating, wholesome and healthy – this recipe can be shared as dessert, 1/2 the recipe for a snack or eat the whole thing as a wholesome sweet meal! 

Ingredients:

  • 1 cup whole wheat flour (can try other flours like oat flour, buckwheat, teff flour etc but I haven’t tried it with those yet!)
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1-2 tbsp peanut butter or nut butter of choice
  • 1 cup plant milk
  • Sweetener to taste – I used two TBSP raw sugar! Use agave, maple syrup or whatever you want!
  • add ins – choose whatever flavors, spices, add ins you desire! I added cinnamon to mine!

Instructions:

  1. Mix everything together in a microwave safe dish.
  2. I did 1/2 the batter in two small bowls (wanted to test the recipe first before making the whole recipe!)
  3. Microwave for roughly 2 min (if halved) or probably 3-3.5 minutes for the whole thing depending on microwave.
  4. Top with warmed sliced apples and a I drizzled a sauce of peanut butter, almond milk and raw sugar + cinnamon over top! Have a glass of plant milk on the side 🙂
