These muffins were made on a whim the first night I came home!
I was super jet lagged but my momma said she wanted some type of baked good..
so I just went for it!! And these turned out perfect!
Super healthy and super versatile (you can swap/add any flavors you want!)

so I just went for it!! And these turned out perfect!
Super healthy and super versatile (you can swap/add any flavors you want!)
Ingredients:
- 2 cups flour – I used about 1/2 oats and 1/2 whole wheat!
- 2 cups water or plant milk
- 1/4 cup almond or peanut butter
- 1/2 a banana
- Splash of vanilla
- 1.5 tsp baking SODA!!
- 1/4 cup maple syrup
- Lots of cinnamon and blueberries if you’ve got em (can omit and add whatever flavors or fruit you want!!)
Directions:
- Pre-heat oven to 375F
- Oil or use parchment paper cups or use a silicone cupcake baking dish and fill as many as you can with the batter to the brim!
- Bake for 25-30 min (until brown!) .. I like to make the outside nice and crispy! But feel free to cook for less for a softer outside.
