‘Chicken’ Parm!

+ Brownies + Apple Bake

This recipe will knock your socks off! Using tofu or if you are like me and dislike tofu, you can use an array of vegetables instead! Quick, easy and so delicious!

CHICKEN PARM

Ingredients: 

  • 16 oz tofu (as firm as you can find) OR use sliced eggplant, cauliflower or zucchini! (drying them all out / draining)
  • 1/2 cup rice flour, whole wheat flour OR corn starch
  • an ample amount of italian seasonings
  • 1/2 tsp garlic powder / 1/2 tsp onion powder
  • pepper/salt if desired
  • 1.5 cups panko bread crumbs, bread crumbs of choice OR you can use organic unsweetened crushed corn flakes (we used bread crumbs)
  • 1 cup plant milk – we used almond.
  • OPTIONAL: a little bit of oil (more info in directions below)

Directions:

  1. Pre-heat oven to 400 and line a baking sheet with parchment paper.
  2. Make sure to press tofu for 30-60 min to get water OUT. Same with veg!
  3. Set up 3 bowls.
  4. Mix bread crumbs / seasonings in 1 bowl (add some oil into this mixture if desired – might make them a little less dry but we didn’t notice much of a difference either way – we tried both!) , plant milk in 1 bowl and whichever flour you are using in another.
  5. Leave the tofu in whole slabs or cut into sticks like I did..as thick or thin as you like!
  6. Dip first in the flour – coating evenly.
  7. Next in the milk.
  8. And finally press into bread crumbs and coat evenly!
  9. Place on your parchment paper and repeat until you are done.
  10. Bake for 10 min and flip and bake for another 10/15 min until they are crispy!

BROWNIES

Ingredients: 

  • 3/4 cup sweet potato puree
  • 1/2 cup peanut or almond butter OR allergy-friendly sub
  • 1 tsp pure vanilla extract
  • 1/4 cup + 2 tbsp flour (whole wheat or spelt works)
  • 1/2 cup maple syrup or to desired sweetness
  • 1/4 cup + 2 tbsp cocoa powder
  • 1 1/2 tsp baking powder

Directions:

  1. Preheat oven to 325 F. Line an 8-inch pan with parchment paper or grease well.
  2. Mix together everything in a bowl. Feel free to mix wet first, then dry and pour dry into wet — I just did them all.
  3. Smooth into parchment paper pan! This can be sticky but take your time.
  4. Feel free to add chocolate chips on top – we didn’t have any but this would have been yummy!
  5. Bake for 20 min and let cool entirely before trying to cut it up!
  6. I made a mix of peanut butter, maple syrup and cacao for Thanksgiving .. and the leftovers we spread peanut butter on! Even plain they are delicious!

APPLE BAKE

Ingredients:

  • 2 cups oatmeal – I used quick oats but I think any oats would work.
  • 1 mashed banana + 1/4 cup maple syrup
  • 2 tsp baking powder + 1 tsp salt (these are optional but will make it fluffier – just adds more sodium to the mix)
  • 1 tbsp flax
  • 1 cup plant milk
  • lots of cinnamon (or apple pie spice!)
  • 2 tsp vanilla
  • some apples cut up however you want.

Instructions:

  1. Preheat oven to 350F and line your baking sheet with parchment paper or oil it well.
  2. Mix everything together in a big bowl and pour into pan.
  3. Bake for 40 min!
  4. We added cinnamon peanut butter on top of ours!
