These are easy, cheap and delicious for any time of day!
Ingredients:
- 1.5 cups oats (rolled, quick or oat flour – the bigger the grain the less compact it will turn out! All are amazing but I used quick oats in these)
- 1/2 cup single ingredient organic hemp protein powder (best protein ever and healthiest – you can use hemp hearts as well!)
- 1 cup coconut flour (or almond flour or more oats)
- 1/2 cup peanut butter (almond or tahini work too!)
- 1/3 cup maple syrup
- 2 flax eggs – 1 egg = 2 tbsp flax + 5 tbsp water
- 2 tsp vanilla
- 1 tsp baking powder
- Add ins: chocolate chips, dried fruit, nuts, seeds, cinnamon, cacao or cocoa etc.
Directions:
- Preheat oven to 350F and grease/parchment paper a 9×9 baking dish.
- Combine all ingredients in one big bowl and mix well.
- Transfer to baking dish and press firmly into pan (use parchment paper between surface and hands if batter is sticking to your hands.)
- Bake for roughly 15 minutes.
- Optional: sprinkle chocolate chips on at around 14 minutes and bake for another minute – remove and spread chips with back of a spoon to evenly coat the top!
- Let them cool completely before cutting them up!
- Store in an airtight container for up to 5 days.
