Irish Stew (Delicious!)

Alright, another Holiday = more stress with family on WHAT to eat and how not to make a fool of yourself in front of non vegans .. aka being prepared. I am going to post a recipe for Vegan Irish Stew (I don’t have a photo yet since I haven’t made it since my step-dad’s bday party and I never took a photo!) .. but I should have some pics hopefully after the holiday or maybe even a full recipe video! Just know – it is delicious! And so easy since you make it in a big pot!
Ingredients:
- 2 stalks of celery chopped
- 1 yellow onion chopped
- 3 carrots peeled and chopped
- 2 parsnips peeled and chopped
- 8 oz mushrooms
- 2-4 medium potatoes cubed
- 4 cloves of garlic minced
- 1/4 cup all purpose flour – can use any flour you like
- 2-4 cups veggie broth
- 1/2 cup tomato paste
- 2 bay leaves
- 1 tsp dried thyme
- 2 tsp brown sugar
- 1/2 tsp salt (can omit!)
- 1/2 tsp ground pepper
- 1 bottle of vegan stout beer
Instructions:
- Heat a large pot over medium heat – add some veggie broth + celery, onion, garlic and cook for about 5-7 min until onion is translucent.
- Sprinkle in the flour and add in 2 cups of vegetable broth.
- Add in beer and all the rest of the ingredients – stir well and bring to a simmer. Cook until the veggies are fork tender.
- If the stew is too thick for your liking, add in veggie broth until desired thickness is achieved!!
- Serve over mashed potatoes (in the “Earth To Mouth” Ebook!)
You can make 1-2 other dishes to pair with this if you feel like it! Maybe a vegetable and some kind of easy dessert!
