Irish Stew (Delicious!)

Alright, another Holiday = more stress with family on WHAT to eat and how not to make a fool of yourself in front of non vegans .. aka being prepared. I am going to post a recipe for Vegan Irish Stew (I don’t have a photo yet since I haven’t made it since my step-dad’s bday party and I never took a photo!) .. but I should have some pics hopefully after the holiday or maybe even a full recipe video! Just know – it is delicious! And so easy since you make it in a big pot! 

Ingredients: 

  • 2 stalks of celery chopped
  • 1 yellow onion chopped
  • 3 carrots peeled and chopped
  • 2 parsnips peeled and chopped
  • ​8 oz mushrooms
  • 2-4 medium potatoes cubed
  • 4 cloves of garlic minced
  • 1/4 cup all purpose flour – can use any flour you like
  • 2-4 cups veggie broth
  • 1/2 cup tomato paste
  • 2 bay leaves
  • 1 tsp dried thyme
  • 2 tsp brown sugar
  • 1/2 tsp salt (can omit!)
  • 1/2 tsp ground pepper
  • 1 bottle of vegan stout beer

Instructions:

  1. Heat a large pot over medium heat – add some veggie broth + celery, onion, garlic and cook for about 5-7 min until onion is translucent.
  2. Sprinkle in the flour and add in 2 cups of vegetable broth.
  3. Add in beer and all the rest of the ingredients – stir well and bring to a simmer. Cook until the veggies are fork tender.
  4. If the stew is too thick for your liking, add in veggie broth until desired thickness is achieved!!
  5. Serve over mashed potatoes (in the “Earth To Mouth” Ebook!)

You can make 1-2 other dishes to pair with this if you feel like it! Maybe a vegetable and some kind of easy dessert!
