Maple/Cinnamon Apple Quinoa

Ok, this was SO easy, so simple and SO HEARTY/DELICIOUS!
Have this for any meal of the day and make lots of extra and store it in the fridge for desserts/breakfasts/meals/snacks for days!!
Have this for any meal of the day and make lots of extra and store it in the fridge for desserts/breakfasts/meals/snacks for days!!
You will need:
- Quinoa – I would say use about 2 cups dry (yields about 6 cups cooked) and for a solid meal I would use about 2 cups cooked!
- Vanilla/Cinnamon or Apple Pie Spice
- Apples
- Almond milk or other plant milk
- Toppings: Dried cranberries, raisins, dates, maple syrup, nuts, nut butter etc. Basically whatever you want!
Directions:
- Cook quinoa with 1/2 plant milk and 1/2 water + vanilla and cinnamon.
- Toss diced apples + water or some maple syrup + cinnamon in a pan and steam/fry them up till soft.
- Place 1-2 cups quinoa in your bowl – add apples on top + any other toppings of choice and I like to drizzle some plant milk over top as well!
