Soft Brownie Cookies

These are KILLER!!
Such simple ingredients and yet they remind him of the brownies his mom made for him as a kid! Just without the butter, eggs, milk etc!
Such simple ingredients and yet they remind him of the brownies his mom made for him as a kid! Just without the butter, eggs, milk etc!
Ingredients:
- 1 cup mashed sweet potato
- 1/4 cup peanut butter (or any nut butter)
- 1/4 cup apple sauce
- 1/4 cup coconut flour
- 1/4 cup whole wheat or oat flour
- 1/4 cup cacao or cocoa powder
- 2 tsp baking soda
- splash of vanilla
- handful of vegan choco chips (optional!)
- sweetener of choice – I used stevia powder but you can use cane sugar, agave, maple syrup etc!
Instructions:
- Preheat oven to 350 (I usually convect back!)
- Add in sweet potato, peanut butter, apple sauce, flour, cocoa power, baking soda and vanilla to a food processor or vitamix type blender (normal blender won’t work!)
- Process until smooth (you may have to mash it down a bit in the processor or blender to get it going!)
- Roll into balls and flatten until they are little cookie shapes – make them whatever shape you want!
- Bake for about 15-20 minutes and make sure to let them cool on the baking sheet for 10 min!
- Store in an airtight container if you don’t eat them all right away!
