Soft Brownie Cookies

These are KILLER!!
​Such simple ingredients and yet they remind him of the brownies his mom made for him as a kid! Just without the butter, eggs, milk etc!
Ingredients:

  • 1 cup mashed sweet potato
  • 1/4 cup peanut butter (or any nut butter)
  • 1/4 cup apple sauce
  • 1/4 cup coconut flour
  • 1/4 cup whole wheat or oat flour
  • 1/4 cup cacao or cocoa powder
  • 2 tsp baking soda
  • splash of vanilla
  • handful of vegan choco chips (optional!)
  • sweetener of choice – I used stevia powder but you can use cane sugar, agave, maple syrup etc!

Instructions: 

  1. Preheat oven to 350 (I usually convect back!)
  2. Add in sweet potato, peanut butter, apple sauce, flour, cocoa power, baking soda and vanilla to a food processor or vitamix type blender (normal blender won’t work!)
  3. Process until smooth (you may have to mash it down a bit in the processor or blender to get it going!)
  4. Roll into balls and flatten until they are little cookie shapes – make them whatever shape you want!
  5. Bake for about 15-20 minutes and make sure to let them cool on the baking sheet for 10 min!
  6. Store in an airtight container if you don’t eat them all right away!
