Vegan Scones!

My momma used to make cranberry scones with a delicious orange/vanilla thick spread and they were always SO good! I figured I would give scones a go but try for a healthier version – completely vegan and using no refined products!
You can spread some vegan butter or jam (or both) on these! The flavors are interchangeable – so you can omit the cranberries and add in other types of fruits/flavors to make them to your liking!
Ingredients:
- 2 cups spelt flour (you can try other flours if you want!)
- 1 cup coconut milk (full fat) – you can try using less and subbing for other plant milks or lite coconut milk but I am not sure how they will turn out!
- 1 tsp vanilla
- 2 tsp baking soda (aluminum free)
- 1/2 cup sugar of choice OR 1/2 tbsp stevia powder
- 3/4 tsp salt
- Flavors/Add Ins: I used cranberries! You can use any dried fruits, berries, apples, banana, cacao nibs or vegan choco chips, cinnamon or just plain- the possibilities are endless!
Instructions:
- Preheat oven to 425F
- Spray or lightly oil or lay parchment paper down on a round baking dish (you can probably use any kind of dish or pan – you’ll just need to shape it properly! But I think it will turn out about the same. I used a springform cake pan!
- Mix all dry ingredients together in a big bowl.
- Pour in coconut milk and vanilla.
- Mix slowly – first with a spatula or whisk and then eventually with your hands!
- Knead dough a little (don’t over mix!) and form a ball.
- Press dough into pan or form a circle on your flat pan etc. You’ll want it to be about 1 inch high!
- Bake for 15-17 minutes and let it cool completely before removing from pan and cutting like a pizza – into triangle slices!
