Buffalo Chickpea Sammy

This spicy chickpea mix can be popped on top of a salad, eaten as a side dish or put between two wholesome slices of bread and eaten as a sandwich!

I am not big on eating pre-packaged breads daily – but a wholesome bread made with minimal/unrefined ingredients is great from time to time! I like the organic rye from Whole Foods or Dave’s Killer Bread- pretty minimal ingredients and Damon’s favorites for sure!
Ingredients:
- 2 cans (15 oz each) organic chick peas (rinse well!)
- 1 medium carrot – diced
- 1 medium stalk of celery – diced
- 1/2 cup hummus (oil free hummus recipe in my ebook!)
- 3 tbsp hot sauce
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp paprika
- toppings like: cucumbers, tomatoes, onion, spinach/romaine etc!
Instructions:
- In a mixing bowl add chickpeas and mash – I used a potato masher.You can use a fork or whatever you think will work best!
- Add carrots, celery, hummus, hot sauce, spices and mix well!
- Toast bread (or not!) and spread on + add toppings! Or have as a side dish or on top of a big salad!
