Buffalo Chickpea Sammy

This spicy chickpea mix can be popped on top of a salad, eaten as a side dish or put between two wholesome slices of bread and eaten as a sandwich!
​It was a hit with my entire family (the vegans and the NON vegans!)  
​I am not big on eating pre-packaged breads daily – but a wholesome bread made with minimal/unrefined ingredients is great from time to time! I like the  organic rye from Whole Foods or Dave’s Killer Bread- pretty minimal ingredients and Damon’s favorites for sure!

Ingredients:

  • 2 cans (15 oz each) organic chick peas (rinse well!)
  • 1 medium carrot – diced
  • 1 medium stalk of celery – diced
  • 1/2 cup hummus (oil free hummus recipe in my ebook!)
  • 3 tbsp hot sauce
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • toppings like: cucumbers, tomatoes, onion, spinach/romaine etc!

Instructions:

  1. In a mixing bowl add chickpeas and mash – I used a potato masher.You can use a fork or whatever you think will work best!
  2. Add carrots, celery, hummus, hot sauce, spices and mix well!
  3. Toast bread (or not!) and spread on + add toppings! Or have as a side dish or on top of a big salad!
