Loaded Toast!

Everything is SO fresh here in Mexico – including the AMAZING, organic, whole grain breads from Mooring Market! I would love to start making my own breads someday – but for now we loaded these bad boys up with all the fresh goodies we could find! 
These breads are mostly oil free (and bread uses such a small amount of oil that it truly doesn’t even matter!) and made from WHOLE ingredients – whole grains, nuts, seeds etc! Water, salt, yeast, flour are the biggest ingredients and while I don’t promote eating bread all day long (opt for majority foods like fruits/starches/veg/greens/plant fats/legumes) having some minimal and wholesome bread is perfectly fine.

 

Ingredients:

  • Can of well rinsed/organic black beans.
  • Onion, garlic, cilantro, red pepper  flakes, dash of cumin.
  • Cooked rice/grain (any kind!)
  • Salsa of choice.
  • Avocado/guacamole/hummus.
  • Corn.
  • Bread (can sub for corn tortillas or omit entirely!)

Directions:

  1. Cook up rice of choice / corn and set aside!
  2. Mash avocado or make guacamole / hummus.
  3. In a medium nonstick pan add a bit of water + diced onion, garlic, red pepper, cumin and cook until onion is soft (don’t burn!) – about 5 min or so.
  4. Add in rinsed black beans and stir and warm for 5-10 min and set aside!
  5. Toast bread if you like..
  6. Start adding toppings – we started with a base of avo or hummus, added rice/corn, then the beans and finally SALSA!!!
