Easy No-Bake Orange Vanilla Cheesecake!

This was almost too easy to make + absolutely delicious! I started with a recipe HERE. I changed up a few of the ingredients/measurements and it turned out absolutely perfect! But feel free to follow either recipe for amazing results!
Crust Ingredients:
- 250g medjool dates (gooey big dates!)
- 155g instant oats or pre blended oats — to oat flour or chunkier it doesn’t really matter!
- tsp vanilla
- tsp cinnamon (optional)
Crust Directions:
- Blend up dates/vanilla in a food processor OR vitamix until it forms a gooey paste.
- Scoop this out and in a bowl mix in your oats or oat flour.
- Line a smaller round release cake pan with parchment paper and press the dough ball in the bottom of the pan and up the edges if you can!
- Set in the freezer to chill while you make the filling!
Cheesecake Filling Ingredients:
- 1/2 cup raw/soaked cashews (soak overnight in water!)
- 2 medjool dates
- 1 ripe banana
- 1 tsp vanilla
- 1 tbsp citrus zest
- 1/4 cup lemon juice
- 2 tbsp maple syrup (can use any sweetener of choice or none if you want!)
- 1/2 cup non dairy yogurt (unsweetened and can be vanilla if you want!)
Cheesecake Filling Directions:
- Blend everything up until smooth in a high speed blender or Vitamix – for dates: to avoid chunks you can blend in the extra 2 dates with the crust dates above and then set aside the paste!
- Pour batter into chilled pie crust pan and cover lightly with wax paper.
- Set in the freezer for at least 6 hours! (let it sit out for 5-10 min before serving so it isn’t rock solid!)
- Serve with coconut whipped cream, orange zest and berries on top – I had no coco whipped cream so i was SOL (sh*t outta luck!!)
